Spring seems like a fun time for a lemon cheesecake, wouldn't it? Its definitely still chilly enough outside that you choose to dont have to bother about heating up the kitchen whilst it bakes, and the sunny lemon taste could make these cold, dreary days seem a bit of brighter.

You could certainly operate the more traditional crushed gingersnaps or shortbread cookies for those crust; although the Oreo cupcakes were quite tasty and did actually accentuate the lemon tastes.

You can purchase Chris honey along at the Sugarcreek Township Farm Current market (next winter market June 20, 2013 from 3-5 pm) or you could sample and then buy honey from many different local beekeepers at Freedom Market.

Honey " lemon " cheesecake

The crust:

  • glass butter, melted
  • 24 whole Oreo or perhaps other cookies
