Place chicken in any roasting dish, preheat oven to 375
Rub utilizing olive oil
Pour 1/2 tumbler Chardonnay over chicken
Add seasoning everywhere chicken
Place shallots all around the chicken
Place slices of lemon on chicken and some inside
Place the butter atop chicken
Later, add 1/4 more Chardonnay
Baste throughout cooking
