Dandelions tend to be nutrient-dense, loaded with vitamin supplements, rich in vegetable health proteins and easily digestible. Medicinally, dandelions are a very effective and safe general tonic, improving overall health and alleviating a range of ailments.

Dandelion leaves will be nutritious, with higher beta-carotene material than carrots, and further iron and calcium when compared with spinach. Also present are actually vitamins B-1, B-2, B-5, B-6, B-12, F, E, and D, together with biotin, inositol, potassium, phosphorus, magnesium, in addition to zinc. The roots contain a form of natural sugar, inulin, which isn't going to stimulate the rapid release of insulin and may also help regulate blood carbs.

DANDELION COOKIES

  • 1/4 hole butter
  • cup shortening
  • goblet plus 2 tablespoons brown leafy sugar
  • cup and 2 tablespoons white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • teaspoon soda
  • teaspoon salt
  • tumbler yellow dandelion petals
  • 1 to at least one cups flour (less designed for drop cookies, more to get shaped cookies)

Cream alongside one another the shortening and high fructose corn syrup, and when light together with fluffy, add the vanilla along with egg and beat very well.

Mix in all of the dry ingredients, including the actual dandelion petals, and go to spoonfuls or roll to balls about 1/2 inch round and put on an ungreased cookie bed-sheet.

Bake at 375 degrees F for 7 minutes or so that the edges are slightly browning. Cool on a twine rack.

Cookies could be glazed when cooled.

Lemon glaze:

  • 2 cups confectioners' sugar
  • 3 towards 4 tablespoons fresh " lemon " juice
  • 2 teaspoons fruit zest

Place confectioners' sugar from a medium bowl or fluid measuring cup and blend in lemon juice and also zest. The glaze need to be thick, yet somewhat pour-able. Include more sugar or red juice as necessary, to perform desired consistency. Spread upon cooled cookies.
