When a cold winter air collections in, we tend to arrive at for all things convenience. Big blankets, cozy knitted garments, and hearty, warm meals that produce us feel at serenity. Yet come the many months of April and right now, May, as stores display swimsuits and fun summer clothing, we suddenly regret the numerous holiday cookies, slices about pie, and legs involving turkey we consumed. This mission: to provide incredible food during the summer season, without any guilt or weight, which create a bulge inside bikini!

This last Sunday, I invited my parents over for lunch. It was the first meal we'd share together in my best new place and WHEN I felt this celebratory occasion deserved a fresh recipe. In keeping by using my mantra of tidy, healthy, balanced eating, I developed a chicken dish that is sure to please: chicken breasts marinated in a very savory mix of balsamic and also herbs, stuffed with sauted onions, spinach, not to mention garlic herb cheese.
