For a light lunch over a warm day try any recipe below. This is an excellent way to enjoy healthy oranges, grapes, pineapple and strawberries combined with protein.

This is in addition a very appealing recipe to serve for the guests for a lunch. Include crusty French baguette loaf of bread slices and freshly created iced tea.

Chicken & Fresh fruit Salad

Ingredients:

  • 2 f. chicken breast (cooked along with cubed)
  • 1 orange (peeled as well as sectioned)
  • 1/2 c. reddish colored or green grapes (seedless plus halved)
  • 1/4 c. chopped up almonds
  • 1/2 c. so that you can 3/4 c. mayonnaise (use sufficiently until just moist)
  • 1 tsp. lime juice
  • 4 pineapple pieces (fresh)
  • Fresh strawberries (halved)
  • Lettuce leaves

Directions:

In pairing bowl combine chicken, fruit sections, grapes, almonds, mayonnaise not to mention lemon juice; toss smoothly. Place in refrigerator to help chill for 30 or so minutes.

Place lettuce leaf about each plate, place clean pineapple slice on any lettuce leaf and leading with one-fourth of greens mixture. Garnish with numerous strawberries. Makes 4 servings

Tip: Romaine, butter, bibb or green leafy lettuce efficient.
