Eggplant Parmesan is like Chicken Parmesan, without all the chicken. It is a satisfying meatless meal that your choice of family will love. The best thing is it's pretty low-priced, too. Yesterday at Kroger, eggplants were a dollar each.

Ingredients:

  • 1 eggplant
  • 1 bottle spaghetti sauce (I work with Ragu Mushroom)
  • 2 glasses or 8 ounces about Italian Blend or Mozzarella Mozzarella dairy product
  • Parmesan cheese around can: around 1/2 cup intended for coating and enough for just a generous sprinkling on top
  • 1/2 mug flour
  • 1/2 cup hammer toe starch
  • 2 eggs
  • 3-4 Tablespoons in water
  • Salt, pepper, and garlic powder for flavor towards the breading
  • Oil for frying

Directions:

Preheat range to 350 degrees.

Prepare eggplant:

  1. Slice any eggplant in thin pieces.
  2. Stack on the plate with salt amongst layers. You will have got several stacks.
  3. Allow to stand a few momemts while you prepare all the breading. Don't skip this because it helps keep eggplant from being saturated.

Prepare Breading:

  1. Mix flour, hammer toe starch, and Parmesan mozerella.
  2. Pour only a minute amount into another saucer or possibly shallow bowl for dipping the item doesn't get sticky. Renew as needed.
  3. Whisk egg and water in the small bowl.

Frying your eggplant:

  1. Heat the oil inside of a skillet on medium heating.
  2. Dip sliced eggplant towards egg mixture then dip inside the breading mixture in saucer.
  3. Place carefully while in the hot oil and fry up to the point both sides are senior.
  4. You may must change the oil involving batches.

Assemble along with bake the Eggplant Parmesan:

  1. Layer fried eggplant in the baking dish with moves overlapping.
  2. Pour the sauce above.
  3. Sprinkle with Parmesan cheese
  4. Cover utilizing Mozzarella or Italian mozerella blend.
  5. Cover from a tent fashion with lightweight aluminum foil and bake approximately 10-15 minutes, and then remove foil just the summer minutes uncovered.
