Saute that onion and garlic in a small amount of the butter until tender and beginning brown. Add to the sweet potatoes with all of those other ingredients. Melt the remaining butter and drop that sweet potato mixture in to the skillet by spoonfuls and flatten down while using back of a place. Fry until slightly browned in each side, about 2-3 a short time on each side.
